You literally can be anything you want, and yeah, when your cat dies, it can either be a StarClan - All cat clans have the same ancestors ^-^ - spirit and keep RPing or you can remove it and make a new cat! Yes, there are rogues and loners, they count as one of your 6 cats. I have 5/6 so far!
