A part of me wants to take commissions like this, but I just don't have the time to make it happen.

I would do them more often, but I agree that it is hard to find time to consistantly do commisions.
I usually only do a few at a time, along with a warning that I will be slow. People are more patient and empathetic than I would expect, even with pre-payment.
