I think the series ended about as best it could. Continuing the series from there would require so much change, the fans would complain it isn't even Gravity Falls anymore.
I feel for you. There are some great TV series I wish could keep running for ever. Then there's The Simpsons..

Alex hirsch stated that he ended it in it's prime so it didn't drag on like other shows and lose it's spark like alot of shows (*Cough* ... Spongebob)
Still kinda sad the best show i grew up with is over
