Depends on the style you're drawing in, honestly. But what I'll usually do is: If I'm having trouble with side profile hair, something that works brilliantly for me is to draw a half circle at an angle. Almost like you're going to draw a bowlcut; then, depending on where the ears and jawline are, shape the bangs or rather strands- around the half circle and ear. That probably made absolutely no sense, bloody h3lI. XD

And if all else fails:
Use refrences. I know EVERYONE says this, but it's-

true. Find a picture that has good movement, or take the picture yourself. Not only will the refrence help with the overall shape, but it'll show the shadows... which is great, lol.

Or... this ones a little wacky... But just start at the hairline of the side profile, and make freehanded lines away from the face. Then shape the hair around those lines.
