Serina looks like a normal girl...
but she isn't.
Really, she's a monster. She needs souls to replenish her sanity and stuff so she won't become a monster. Her heart is made of a gemstone, and when she becomes a monster, her heart breaks. If she uses souls to become human again, her heart repairs, but is still slightly broken. It will never truly be fixed.
