@iamcured ah!!! Well honestly you can start anywhere because the games are very new-player friendly and not confusing so you wont have any trouble understanding it at all (except for maybe Sonic Frontiers) But if you want to know the basic lore, play the adventure games (sonic adventure 1 & 2) and the original trilogy (sonic 1, sonic 2, and sonic 3&knuckles) and you should be set
