On the beef thing, raw beef is apparently fine to eat so long as it's not going bad. Raw POULTRY and PORK are where you watch out.
I know from my mom, who was raised on a farm and had a ton of beef then.

Yeah.. I'd have to look into it. DEFINATELY avoid poultry or make sure it's throughly cooked. And beef is apparently the only meat you can eat raw
