Saturation is a measurement of colour intensity whilst Value is a measurement of colour brightness.
The left image contains colours at maximum saturation but the values of these colours vary.
On the right all of the values are the same but the saturation varies.
The hue selection is the same for both images to eliminate the variable of colour.
As you can see Value plays a much more important role than saturation.
p.s. I used system greyscale to test the values.

Basically Value is what allows us to define shapes and colours of the same value are hard to tell apart even if they are totally different colours.

@Marble-Boo @Hailsss :) glad to offer the tips. My value work needs improvement so i find it helpful to understand how and why it works. Images should work just as well in greyscale if they have good value. If you turn on greyscale on this image the right one becomes a blank square.
