Did you know beets are good for your heart? I created my very own vegan version of the soup that uses coconut cream instead of cow's breastmilk. So you can enjoy this heart-healthy, cruelty free soup without any guilt~! <3

Recipe:
Blend 3 cups watermelon
1 Dragon fruit
1/4 Coconut cream
15 Fresh mint leaves
1 Lime
1/2 Cup ice cubes
With a melon baller, scoop out enough honeydew melon to add to the soup.
Prepare Beets by cutting off leaves, stems, and any rough skin. Place beets into large stockpot with 2 cups water. Sprinkle 1/8 cup of sugar evenly over beets. Bring water to boil, then reduce to simmer for an hour and 30 min, or until fork tender. Remove lid, and cook for another 8-10 min. or until remaining liquid is syrupy. Add the whole sweet beets to the melon broth, and drizzle with agave nectar~ Enjoy with someone you love! <3

@MewinaBubble Ooh it sounds like heaven!! Can you have pastries like angel food cake with it? Or do you normally just have it as is?

@Sky_Galaxy you eat it on it's own~ i suppose you could enjoy with a pastry if you wanted to, but i Wouldn't recommend it unless it was vegan~
