Depending on the number of entries, if there are enough, I plan on picking three winners (1st, 2nd, and 3rd). If not enough, I will pick only one.

maybe you can extent the deadline, or move the deadline to a newdate, becauyse the next weeks it will become sunny and flowers will grow

If you wish to do so, However, there is NO limit on how many entries a person can submit (as long as they aren't exact duplicates.)

That's true. Thank you for the suggestion. I'll think about that. If not this contest, I might make yet another one for springtime. I have some more ideas, since I created this first one.
