I havent done that rainbow effect myself but I think you make a rainbow on a layer in the back, then cover the next layer in front with another color and then simply use the eraser to draw the letters or pic out of the front layer. And for shading someone on here told me to use a combination of the soft brush and the opacity bar (the one on the far left). Just try practicing on a new painting.
