and yes, i had dozens of mary sue OCs growing up lol.

And yeah I had this problem too. My first O.C Was a toataly Bubbly Clumsy gal, but when i realized that she was a mary sue I sat down with her and developed her. Now shes tomboyish, looks out for others, she developed an actual backstory, and i noticed me putting parts of me into her, even though she wasnt me. It was cool to do, because she developed as a person would.

One good bit of advice on this I've heard-
If you feel the need to justify (whether to others or yourself) that it's not a marysue, there's a good chance it is one.
