Xante's (adoptive) family raised famous pedigree dolphins. When they died, extended family members (who hate Xante) inherited the actual business, but Xante got several of the prize dolphins and started her own dolphin ranch. She likes raising dolphins.
Other nobles are afraid of offending her powerful relatives but they want to buy Xante's dolphins because they're healthier and faster.
