Imo, I think fanart and the whole anime style is alright! It's been a template for most artists (Including me :'] ) who've wanted to get started drawing, and eventually people seem to improve/diverge into their own individual styles and the sort!
As for fanart, there's not much to say besides doing fanart is what makes the artist happy, to make something for a subject you enjoy! I wouldn't dismiss a popularity's positive feelings on a show/game because art for that subject is seen often.

But I do see where you're comin' from yo, I respect it, and you're completely entitled to your own opinions! Don't take heed to anything I've said tbh, I trip on my words much too often. B')

Also, if you don't mind me saying,

I understand ya when you say OC artists have difficulty gaining recognition, and my best advice is not to let the follower count get to you!!
It's never good to force yourself into doing something for the sake of others, whilist not being happy yourself!
You should do what you want, and not spend thoughts determining how many followers you could gain today/tomorrow/etc. with your art skill and pieces.

Another rant of sorts but basically "You do you, I do me." In that sort of sense?
