That's what comes with being a Touhou fan, really. ZUN's songs are so amazing we just sorta memorize them.

Well, flats are.... interesting. The fingerings are built to be similar to the natural note, so you can flip back and forth if you need to trill. Notes that are next to each other in general are usually built to be easy flips. (There are exception though, such as Bflat and C. We have to use a different thumb key for that, and not use our right index finger.)

Practice. Did you see what mode it was on? (Easy, Normal, Hard, or Lunatic)
