As I remember in the movie, Mace Windu cut cleanly through Jango Fett's neck, A lightsaber is plasma, unlike a sword, which leaves a bit of blood behind. A lightsaber is like a cauterizer, which instantly closes the wound upon severing of any limb, so in other words. . .too much blood.
