What was a drawing on a piece of paper in a restaurant evolved into a new character, Carrot Quarry.
Her specialty is raising crops on her farm with a special growth spell she discovered when she was young.
Actually, she used to be an Earth pony, but after a bad harvest with dead crops she ran off in anger and found an odd pony in the Everfree forest. She struck a deal with this pony by agreeing to bring them part of her yearly harvest in exchange for the magic of a Unicorn. Quarry agreed, and she was gifted with a horn. Quarry went back to her farm and studied some spells to help with the vegetables. Her farm mostly grows things like carrots and pumpkins.
Carrot Quarry is not a true Unicorn, she's just an Earth pony with a horn. That being said, she maintains the usual strength and earth connection of them.
The red stripe in her hair was a side effect of gaining magic.
I hope it doesn't sound like I'm breaking canon, because there are ponies in the show that have become a different kind, like Twilight getting wings or Cadence getting a horn.
So it's reasonable.
I know that she looks a bit like AppleJack, but I tried to make the colours different shades to try to avoid accusations.
Her cutie mark is a carrot with a magic red swirl spiraling around it.
