It doesn´t really matter whether she has technically been called a princess though.
They were clearly going for a princess-type look and a lot of people call her that based on her apearance and role alone.
It´s like the Disney Princesses who sometimes aren´t princess at all.
It´s not about the Princess in your name, it´s the Princess in your heart that counts.

To me, 'princess' kind of sounds better to Peach and Daisy. For Rosalina, it could go either way...

Zelda is a the (future) ruler of Hyrule, she's not called a queen because princess sounds more awesome.
Peach is the ruler of the mushroom kingdom (at least in the Mario & Luigi games).
Rosalina... did she ever say that she was a princess? Well if she is then she's the princess of the galaxy cause she watches over the cosmos.
Daisy is the princess of S.a.r.a.s.a.l.a.n.d (it got flagged and I don't know why), but she's never been used so noone knows what she does :/

Youre only a king/queen if you are a member of royalty, rule a country AND are married AND there is no current ruling monarch older than you. Prince William is still just a prince because the queen is still alive. Also Super Mario Bro.s 3 for the NES showed that each kingdom DOES have a king/queen, because Bowser turned them into animals and you have to change them back by retrieving their magic sceptars from the Koopalings.
